A fresh, colorful, and nutrient-packed salad made with creamy avocado, sweet corn, juicy tomatoes, crunchy red onion, and briny green olives. Tossed in a zesty lime-olive oil dressing with a hint of white pepper, and finished with fresh coriander for the perfect refreshing bite. 🥑🌽🍅

Ingredients:
1Avocado - Diced
1 Cup Boiled Corn
2 Medium Local Tomato - Diced
1/2 Red Onion- Sliced
15g Green Olives - Sliced
2g Coriander- Garnish - Chiffonade
Dressing:
17ml Fresh Lime Juice
1/2 Tsp Salt
1/2 Tsp White Pepper
8ml Extra Virgin Olive Oil
Preparation
Steps:
Step 1: Boil 1 cup of corn, and cool it down for the salad.
Step 2. In a salad mixing bowl, add the corn.
Step 3. Dice tomatoes into big cubes and add to the bowl. For the red onion , cut the whole onion in half, remove the root, seprate each layer and then slice the onion. Keep the slices a little thick not too thin.Once done add it to the mixing bowl.
Step 4. If using whole green olives, slice them gently and into thin slices so as to not break the slices.Once done add it to the mixing bowl.
Step 5. For the avocado , cut it open in half vertically ( to see to learn the guided way to open cut the avocado check the recipe video) and using a smaller knife dice the avocado while still in the skin and then scoop out using the spoon.Once done add it to the mixing bowl.
Step 6. Once all the fruits and vegetables are added , add the freshly squeezed lime juice, add extra virgin olive oil, add the salt and pepper.
Step 7. Mix the salad well but mix gently to ensure that the avocado doesn't get squished.
Step 8. Once mixed well, transfer to the serving bowl and garnish it with freshly chopped chiffonade coriander and serve!
