Fresh, colorful, and packed with flavor! 🥗 This Beetroot & Chickpea Salad combines earthy beetroot, protein-rich chickpeas, crunchy onions, juicy cherry tomatoes, a zesty lemon dressing, and creamy feta on top. Light, healthy, and perfect as a side or a wholesome meal!

Ingredients
1 Boiled Beetroot
1 Cup Canned Chickpeas
4 Cherry Tomatoes
1/2 Onion
10 g Feta Cheese - Crumbled
Dressing:
1 Fresh Lime - juiced
5 ml Olive Oil
1/4 tsp White Pepper
1/4 tsp Salt
Preparation
Steps:
Step 1. Boil the beetroot for about 5 to 10 minutes, just enough so that the fork can pass through. Once cooked ,let it cool down completely.
Step 2. Add 1 cup of chickpeas to the mixing bowl.
Step 3. Cut the onion in half, and peel the onion properly. Remove the layers of the onion one by one. Once removed, make thin slices and add to a mixing bowl as well.
Step 4. Cut the cherry tomatoes in half and add to the bowl.
Step 5. Peel the beetroot, cut into 4 quarters. Cut the beetroot into small bite-sized cubes.
Step 6. For the dressing, add the seasoning, olive oil, and lime juice into the mixing bowl and toss it well with the salad.
Step 7. Transfer the salad to the serving dish, garnish with crumbled Feta Cheese and serve cold!
