About the Recipe

These cheesy Bread Pockets are the perfect blend of comfort and creativity — soft bread slices filled with a flavorful mix of sautéed tomatoes, onions, corn, and garlic, all hugged together with melty cheese. Each pocket is folded into a neat triangle, making them fun to assemble and even more fun to eat. They’re great as a quick snack, a party appetizer, or a cozy meal you can whip up in minutes. Simple, satisfying, and packed with flavor!

Ingredients

  1.  6 Slices of Bread (White, or Brown, or Multi-grain)


Stuffing:

  1. 20g Butter (salted or unsalted)

  2. 2 Cloves of whole crushed garlic

  3. 30g Diced onions

  4. 35g Diced tomatoes

  5. 35g Corn kernels

  6. Salt and Pepper to taste ( 1/4 to 1/2 tsp each approx)

  7. 6 Cheese Slices


Assembly:

  1. 1 Bowl of water

  2. 2.Stuffing

  3. 3. Cheese slices

  4. 15g of butter- melted

Preparation

Steps:


Pre-heat the oven to 180'


Step 1. Remove the crust of the bread.

Step 2. To dice the onion, separate each layer.

Step 3. Start by cutting vertical thin strips ( Julienne)

Step 4. Cut the strips into smaller cubes (Brunoise)

Step 5. Half the tomato then cut off a wedge. Proceed to cut the wedge into thinner strips.

Step 6. Half each strip vertically, then proceed to cut the thin strips into cubes.

Step 7. Cut the cheese slices into small squares.

Step 8. Add 25g of butter and let melt.

Step 9. Add 2 cloves of crushed garlic to flavor the butter.

Step 10. Add the diced onions and saute. (caramelize the onions)

Step 11. Add the diced tomatoes and saute.

Step 12. Add the corn kernels and saute.

Step 13. Remove the garlic cloves

Step 14. Add salt and pepper as per taste ( 1/4 to 1/2 tsp approx.)

Step 15. Wet your hands and then press down the bread slice.

Step 16. Fill the center with about 1tsp of stuffing.

Step 17. Add a cheese slice on top of the stuffing.

Step 18. Fold in from all four corners and join in the middle.

Step 19: Brush each bread pocket with butter to make them crispier.

Step 20: Bake for about 5 to 7mins till golden brown and crispy.
