This Potato Egg Salad is a deliciously creamy and wholesome dish made with boiled potatoes, boiled eggs, sweet corn, crunchy cucumber, and tangy gherkins. Tossed in a rich mayonnaise dressing and seasoning, and a touch of smoked paprika, it’s the perfect balance of comfort and flavour. Serve it chilled as a side dish, light meal, or even for picnics and gatherings.

Ingredients
2 Boiled Potatoes
1 Hard Boiled Egg
1/2 Cup of Boiled Corn
1/2 Cucumber
1 Gherkin
Dressing:
35g Mayonnaise
1Tbsp Gherkin Juice
1/2 Tsp Cajun Spice
1/4 Tsp Smoked Paprika Powder
1/4 Tsp Salt
1/4 Tsp Black Pepper Powder

Steps:
Pre-Preparation:
Step 1. Peel the Potatoes and add them to a pot of cold water, and bring to a boil. Boil the potatoes for about 15 minutes, until they are cooked well, so that a fork can easily pass through. Don't overcook, as this will cause the potatoes to lose their shape when mixed into the salad. Once boiled, let it cool down for about 20 minutes
Step 2. Boil an egg for about 10 to 12 minutes for a hard-boiled egg. Once cooked, let it cool completely.
Step 3. Boil Corn for about 5 to 10 minutes till cooked well. Once cooked, let it cool completely.
Assembly of the Salad:
Step 1. Cut the cucumber and potatoes into small, bite-sized cubes. Cut the egg into quarters and make them into bite-sized pieces as well.
Step 2. Take 1 gherkin and slice it into thin, round slices.
Step 3. In a mixing bowl, add the diced cucumber, potato, corn and gherkin slices. Toss them and mix well.
Step 4. Add the spices into the mixing bowl with the vegetables, and add the mayonnaise, and add the gherkin pickle juice as well. Toss the dressing with the salad and mix well!!
Step 5. Once the dressing is well mixed with the salad, add the egg to the bowl and toss it around gently to ensure the egg is coated well, but it doesn't break and get smashed.
Step 6. Once done, serve it cold and season with a little bit of smoked paprika powder.
(Optional: Can garnish with finely sliced chives/spring onions as well)
